Liturgy
There are several liturgical rites of the Catholic Church. Most English-speaking Catholics follow the Roman Rite. There are also a number of Eastern Rites (which I'd like to find more on-line resources for).
The Mass (of the Roman Rite)
- New: Hear this week's Sunday Mass (in RealAudio) celebrated in Raleigh, NC
- The last major revision of the Order of Mass was made in the late 1960s, after Vatican II. Here is the English and Latin for it, as of 1975. (Some minor revisions and additional options have been added since then. There were a few typos in this transcription last I checked.)
- The General Instruction of the Roman Missal gives the official regulations and guidelines on how the Mass is to be celebrated. This edition is from 1975, and may not necessarily reflect the most recent rules.

- Tridentine Latin Mass in Latin and English (also here.) The "old Latin Mass" was standardized at the 16th century Council of Trent, and developed with minor revisions up through the 1960s. This is the 1962 version. It is permitted by indult in many dioceses. Here is a list of approved Tridentine masses worldwide, courtesy Fidelis, Inc.

The Byzantine Rite

- Mass: The Byzantine Rite uses the liturgy of St. John Chrysostom, which you can find here. You can also look at the Orthodox version at ocf.org.
- Divine Office: This page has the service texts to parts of the Divine Office as celebrated in the Orthodox Church. The Byzantine Catholic version is very similar.
